Parsley Honey

Preserves

Alternative to honey made by mixing parsley juice with sugar syrup. It is said to gell, taste and look like heather honey. Known at least since House and Garden Magazine of 1918.

PARSLEY HONEY. This is delicious eaten with bread and butter, or as accompaniment to cold meat. It is also good for invalids suffering from nervous complaints Use fresh young parsley, and wash it well. Fill a Jelly pan with the leaves, and add sufficient water just to cover them. Bring to the boil, and simmer gently for half an hour. Add the juice of one lemon to each pint of liquid the pan, and put in the lemon rinds. Strain through jelly-bag, measure, and to each pint of juice allow one pound of preserving sugar. Return to the pan, boil until it sets when tested, and about half an hour pour into small Jars
