Brummy Bacon Cakes (8 cakes)
Ingredients:
3oz streaky bacon, diced
3 oz grated hard cheese
8 oz plain flour
2 tsp baking powder
pinch of salt
1/4 pint milk
2 oz butter

Lightly fry the bacon bits. Rub the flour into the butter and half of the cheese, the salt and baking powder, add the bacon. Add enough milk to make a soft dough. Form into 8 1/2 thick patties, sprinkle with the remaining cheese and bake in a hot oven until risen and browned, about 15 minutes.

This wartime receipt uses mashed potato instead of flour…
