Duchess Potato

Potato mashed very creamy, piped into small high swirls and baked.

In the tradition of English Cooking as simple and straightforward, this is not the same as the French ‘Duchesse’ potato, which is rolled on a floured board and ‘gilded’ with beaten egg.
