Cooked mashed potato with flour, egg and chopped ham formed into small flat cakes and fried (British Food Trust)

Lady Sarah’s Potato Cakes

8 oz Floury potatoes, boiled and mashed
1 oz Butter
Salt
1 Egg
2 oz Ham, finely chopped
Butter for frying

Mash the potatoes with the butter and salt. They should be rather dry. Add the egg and the ham. Form into little flat cakes and fry in butter until golden.
