 A form of Lancashire Cheese formerly made in or around the town of Leigh. Known at least since the 1795 ‘General View of the Agriculture of the County of Lancaster‘, which has; “The cheese made in the vicinity of Leigh, ??ewborough, &c.; for its mildness and rich flavour, always ??ars an advanced price at market”, and which also provides detailed receipts for cheese-making. Leigh Cheese is repeatedly mentioned in merchant’s advertisements throughout the later 19th Century as being especially suitable for grilling.
