Marrow Butter (Vegetable)

Preserves

A preserve made from vegetable marrow, similar to Apple Cheese. Repeatedly found in newspapers reports of the 1920’s.

Original Receipt from the ‘Tamworth Herald‘ – Saturday 15 September 1928

Marrow Butter Preserve. For 2 lbs. of marrow allow 2 lbs. of sugar, 3 ozs. of butter and 3 lemons. Peel the marrow, and cut it into squares; boil until soft. Well strain away the water and beat up. Add sugar, butter and grated rind and juice of lemons, and boil for 45 minutes. Pour into jars, and tie down when cold. This will keep for a long time.
