Medley Pie (Suffolk Version)

Kidney, apple, potato and onion under a shortcrust cover.


Original Receipt from ‘The Tamworth Herald‘ – Saturday 2 May 1936

SUFFOLK MEDLEY PIE
Ingredients:
1/2 to 3/4 lb. lean pork,
1 pig’s kidney,
2 apples (large),
2 onions (large),
4 potatoes (large),
teaspoonful powdered sage,
1 pint white stock,
Pepper to taste,
Salt to taste.

Method—Cut the pork (remains of a cold joint may be used) and kidney in neat pieces, and arrange in a greased pie-dishseason, sprinkle with the sage and add stock or water. Peel and slice the apples, onions and potatoes, season and mix together, then pile in the dish on top of the meat. Cover with another dish, or a greased paper and cook in a moderate oven for one-and-a-half hours, removing the cover for the last half-hour.
