Sweet pie filled with sliced apple, most often Bramley, with sugar and a sweet spice such as nutmeg, cinnamon etc. Usually only lightly baked. Served with cream or custard. Original Receipt in Hammond 1819; Apple-pie. Pare and core the fruit, lay it in your dish, and sprinkle some sugar between every layer, when full, put in the juice of one lemon, a little of the peel finely shred, and a few cloves, cover with a good paste. |
