Cumberland Ham

Cumberland

Dry cured pork leg, "well rubbed with salt, cured for one month and then matured for two." Cumberland ham is one of the very few English dry, or-semi-dry, hams. Particularly associated with Woodall's of Waberthwaite who also offer an air-dried version.

Cumberland Ham is known to have been advertised in London as a particular speciality at least since 1801.
