Dry cured pork leg, "well rubbed with salt, cured for one month and then matured for two." Cumberland ham is one of the very few English dry, or-semi-dry, hams. Particularly associated with Woodall's of Waberthwaite who also offer an air-dried version. Cumberland Ham is known to have been advertised in London as a particular speciality at least since 1801.
