Scone or sponge cake with high proportion of chopped or sliced apple mixed-in, cooked as a relatively thin (c2ins) slab (Hartley 1954, etc)

Original Receipt from the Derby Daily Telegraph – Monday 02 November 1925

Dorset Apple Cake.
Miss Hetty King, the famous male impersonator, declares that she is deeply fond of cooking, and offers her own recipe for Dorset Apple Cake.

The ingredients required are: 8oz. self-raising flour. 1 egg. 4oz. margarine. gill milk. 4oz. castor sugar. 3/4 lb. apples.

1. Rub margarine into flour, add sugar and apples cut into cubes. 2. Mix with beaten egg and milk. 3. Butter a shallow cake tin and spread mixture over it. 4. Bake a moderate oven for one hour. Cut squares.

In Dorset the cake is eaten hot, but it is equally pleasant when it is cold.
