Original Receipt (with thanks to Dennis Jenner) from Joe Curley, master-cook at Simpsons-in-the-Strand, reported in The Sunday Times Magazine c1979 Durham Fluffin A milk pudding which looks suspiciously like sago pudding, but tastes like something else. You need: 1oz. Pearl barley (soaked overnight in water) 1 pint milk, 2 oz. sugar, I teaspoon grated nutmeg, a few drops of brandy. Simmer the barley in the milk till it is smooth (about 30 minutes; four hours if you haven't soaked it first). Add nutmeg, sugar and brandy. Serve. |
