Medium-bake white wheatflour biscuit of two thin outer layers with squashed currants between, sufficiently thin that a proportion of the currants press through the biscuit, lightly glazed. Typically 11/2ins x 21/2ins x 3/8ins thick, usually supplied in sheets of four biscuits with perforated or lined divisions. A form of Squashed Fly Cake 2013 Photo: James F. Carter Giuseppe Garibaldi (1807-1882), leader of the drive to unite Italy and a ceaseless fighter against dictatorship, was immensely admired in England. The biscuits in his honour were first made by Peek Frean & Co of Bermondsey in 1861, and when he visited London in 1864 it is said that the whole country shut down for 3 days.
