The Gurnet (or Gronnard, or Gurnard) is a sea fish with a large spiny head. Particularly associated with Hastings, but also caught elsewhere. The Hastings method of cooking is to dredge in flour, drag through melted lard, slash the skin and grill. Cranbrook, about 20 miles inland, is associated with a Gurnet Pudding: in suet pastry, boiled in a cloth. |
