Steamed Pudding with chopped prunes and ginger. Original Receipt from 'Newcastle Journal' - Thursday 01 January 1914 HILLWOOD PUDDING. Take half a pound of prunes, half a breakfastcupful of breadcrumbs, an ounce of Demerara sugar, half a teaspoonful of baking-powder, a quarter of a teaspoonful of ground ginger and the same quantity powdered cinnamon, a little grated lemon peel, a breakfastcupful of milk, and two eggs. Well wash and soak the prunes for least an hour, afterwards stew them very gently for fifteen minutes with sugar and a little lemon rind cut into strips the water the soaked in; then stone the fruit, and chop it fine. Mix it with the breadcrumbs, etc.. three parts fill the mould—not more —and steam the pudding for one hour and a half. |
