TWO SUSSEX DISHES.
Recipes for five dishes peculiar Sussex are given a novel collection, "County Recipes of Old England" (Country Life. Ltd., 3s. 6d.). which has just been published

Two of those chosen dishes are the following:

LARDY JOHNS.
1/2 lb. of flour.
1oz. of sugar.
1/4 lb. of lard.
1/2 oz. of currants.
1 1/2 teaspoonfnls of baking powder,
1/4 pint water

Rub the lard into flour, then add the baking powder mixed with the sugar; last of all put in the currants after have been thoroughly picked over and cleaned. Mix into a stiff paste with the water; roll out. cut into 2 ins. squares, and bake for about ten to fifteen minutes.
