Haddock fried in lime-flavoured breadcrumbs, served with lime wedges. Known only from the the former British Food Trust. Original Receipt from British Food Trust Lime Crusted Haddock This is a lovely supper dish that takes less than 30 minutes to make. Ingredients Serves: 4 2 Limes 200 Gram Fresh white breadcrumbs (7 oz) 50 Gram Butter, melted (2 oz) 4 x 175 Gram Haddock fillets, skinned (6 oz) Salt and pepper 1 Tablespoon Olive oil Lime wedges, to garnish Method Preheat the oven to 200 °C / 400 °F /. Gas 6. Grate the zest from the limes. In a bowl, mix the breadcrumbs with the butter and lime zest. Cook over a medium heat in a frying pan for 2-3 minutes, stirring until the crumbs are pale golden. Put the fish in a shallow dish. Season with salt and pepper and squeeze over a little lime juice. Drizzle with the oil. Pat the crumb mixture on top and bake for 10-12 minutes until cooked. |
