Nodding Pudding

Lancashire, Yorkshire, Cumbria, Durham, Northumberland

Mashed potato, possibly with other vegetables, mixed with flour and butter, baked in a pie tin until it develops a crust.

The name appears to derive from 'nodden' or 'knodden', an old northcoutry version of 'kneaded'.
