Minced beef and onion with tomato and baked beans under a lid of sliced potatoes sprinkled with cheese, baked. Well known from local reports and newspapers since c1990, this dish is repeatedly titled "Padiham Pie - Never On A Tuesday", as, being made on Monday of left-over Sunday roast, it is too delicious to last 'till Tuesday. [email protected] PADIHAM PIE (Never on Tuesday) Ingredients: 1lb cold roast beef 1/4 lb onions 1 small tin of tomatoes 1 small tin of baked beans 1 good teaspoon of flour 1 good teaspoon of gravy powder pepper and salt 1 1/4 lb potatoes 1/4 lb Lancashire cheese Method: Mince the beef and the onions and mix in the tomatoes, beans, flour, gravy powder and condiments. Turn into a suitable dish and cover with slices of peeled potatoes. Bake at about 375ºF (180ºC, Fan 160º C, Gas Mark 5) for three quarters of an hour, capping with shredded cheese about fifteen minutes before baking finishes. |
