Pickled Green Cabbage

Preserves

Sliced green cabbage with sliced onions, salted, and preserved in spiced vinegar.

This alternative to the more popular pickled red cabbage was once thought to be a useful medicine against scurvy, as given in Dr. Brookes 'General Practice of Physic' of 1765; "Those who have been weakened by long Fits of Illness should have the Scurvy prevented by Panada of bread newly baked with a few Drops of the Extract of Lemons and a Spoonful of Wine as also Oatmeal and Rice Gruels, Flummery, stewed Barley with Raisins or Currants, Sago and Wine &c; But more particularly pickled green Cabbage and small Onions boiled."
