There is little tradition of eating squid in England, and, in the few places where it is treated as a delicacy rather than just as bait for the next catch, no other way than simply boiled, soused in butter and eaten with brown bread. This simple, and therefore entirely English, preparation has been almost entirely supplanted by fancier Mediterranean ways, but is occasionally found yet in the homes of fishermen along the South-West coast of Dorset and Devon. |
