Decorative biscuits made by forming a shape (stars, circles etc) of sweetened paste with an open centre filled with crushed boiled sweets. When baked the sweets melt to form a coloured window. These biscuits are now customarily made in simple shapes, but what appears to be the original receipt and picture suggest a pastiche of a church window. Original Receipt in 'Enterprising Ideas' by Penny Coltman and Jayne Greenwood (1999) Make stained glass window biscuits using pastry strips and boiled sweets. The shape of a window is made on a lined baking tin by criss-crossing strips of pastry. Wet the pastry wherever strips cross or join to hold it.
