Gardener's Pie

Fruit and Vegetables

Any pie-form vegetable mixture, usually with cauliflower or broccoli under a paste crust, crumble-type breadcrumb topping or a cottage-pie type mash top.

The Burlington Hotel on the Isle of Wight use broccoli in a cheese sauce coated with potato.

GARDENER'S PIE. One large cauliflower, one pound of tomatoes, four tablespoonfuls of milk, a sprig of thyme, two ounces of cheese, two ounces of butter, one teaspoonful of chopped parsley, salt, « one large onion, mashed potatoes, the cauliflower, boil in salted water until tender, and drain. Beat into a cream, season, add the cheese, parsley, chopped thyme, and half the milk. Mix well, and line buttered casserole with it. Add a layer of peeled and sliced tomatoes, and a sprinkling of grated onion. Put few small pieces of butter between the layers, and repeat until the dish is full. Season the potatoes. add the rest the milk to them, mix well, and spread on top of the casserole. Mark the top with a fork, and bake in a moderate oven for half-an-hour.



The name is known at least since the 1903 'Please, M'm, the Butcher!': A Complete Guide to Catering for the Housewife of Moderate Means, by Beatrice Guarracino, which uses cauliflower, beans, potato and other vegetables in a white cream sauce.
