 Small sausages wrapped and baked. When prepared as a snack, the 'blanket' may be a triangle of puff paste folded around an actual sausage, not just sausage meat, so as to largely expose the upper sausage surface, differentiating it from a sausage roll. When prepared as an accompaniment the 'blanket' is a slice of bacon.  Uncooked accompaniment type Pigs in Blankets from www.bostonsausage.co.uk Several USA cookbooks of around 1900 use this name for a version of 'Angels on Horseback' (qv) - oysters wrapped in bacon.  |
